Cajun Caribbean Lobster tails, Honey glazed lamb chops, twice stuffed baked potatoes, garlic white wine green beans

Theres a few things I've made that take my breath away... this recipe is definitely on that list. I've had a hell of a week. Between work, family and life challenges, I needed to pour my heart and soul into a dish. This took 3 hours to prepare and I enjoyed every moment. I put my phone on airplane mode and got lost in this meal. When it was finished, my heart and soul felt light. I felt accomplished and proud plus this was DAMN GOOOOOD. A crowd pleasing meal perfect for every and any occasion!

Non-negotiable. This recipe costs approximately $25-30 per serving. Lobster tails and lamb chops are almost never on sale. Save this recipe for a birthday, anniversary, special occasion or just because if you got it like that!

Non-Negotiable. You can't rush this meal. If you do, it won't come out right and you'll end up wasting good expensive ingredients. (been there, done that). Save this recipe for a day where you don't have anything to do.

Negotiable. Plan out what kind of dinnerware you'll be serving this meal on. You'll want to take pictures because this is an aesthetically pleasing dish. Use a bold color background (preferably black or white). 

Ingredients (Serves 3)

This recipe serves 3 people (respectively) but if you're greedy like me, it serves 2!
PREP TIME: 2 HOUR
COOK TIME: 45 MIN
TOTAL TIME: 2 HR 45 MIN
EST PRICE: $25-30 PER PERSON

For the LAMBCHOPS
2 lbs (6-8 pieces) of 1' lamb-chops 
1/4 cup of honey
1 TBSP of soy sauce
1 TBSP of minced garlic*
1 TSP of sesame oil
1 tsp of salt*
1 tsp of pepper*

FOR THE CAJUN BUTTER LOBSTER TAILS
3 lobster tails (Caribbean or Maine)
3 TBSP of salted butter*
1 TSP of old bay*
1 TSP of smoked paprika
1 TSP of Tony Chacheres Creole Seasoning
1 TSP of freshly chopped parsley*

FOR THE TWICE BAKED LOADED STUFFED POTATO 
3 large potatoes
1/4 cup of chopped bacon
1/2 cup of sharp cheddar cheese
2 TBSP of sour cream
2 TBSP of salted butter*
1 TBSP of all purpose seasoning
1 TSP of onion powder
1 TSP of old bay seasoning*
1 pinch of freshly chopped chives or green onion

FOR THE GARLIC WHITE WINE GREEN BEANS 
2 lbs of french cut green beans
1 TBSP of olive oil
1 TBSP of minced garlic *
1 TSP of salt*
1 TSP of pepper*

*these ingredients are used across multiple dishes.

FOR THE CAJUN BUTTER LOBSTER TAIL
Step 1. Use kitchen scissors to cut down the top of each lobster tail. Cut all the way down until you get to the tail. (DO NOT CUT THE TAIL)
2. Use your thumbs to push lobster meat up and out of the shell. Be gentle. This is where I usually fuck up. Once all of the lobster meat is detached from the shell, push the two sides of the shells together and lay the lobster meat up (on top)

3. Melt your butter. Add in smoked paprika, old-bay, Creole seasoning and parsley into butter and mix.  
4. Pour butter mixture thoroughly onto each lobster. Rub in with your hands if you must. 
5. Once the lobsters are fully coated with Cajun butter mixture, cook for 12-15 minutes in over at 375 degrees. 

FOR THE HONEY GARLIC GLAZED LAMB CHOPS
1. Add soy sauce, garlic, honey, sesame oil to bowl and mix thoroughly- set aside.
2. Season lamb-chops with salt, pepper, soy sauce and olive oil. Let marinate for 1 hour.
3. Heat cast iron skillet on HIGH and add olive oil to pan
3. Pan sear lamb chops 3 minutes on each side
5. After the lamb-chops are perfectly crusted on each side, add honey mixture on top and let the lamb-chops cook in the sauce for 3 minutes

FOR THE TWICE BAKED LOADED POTATO
1. COOK potatoes at 350 degrees for 45 minutes in the oven (or until soft) Check with a fork.
2. While your potatoes are still hot, scoop the insides out and put aside in a mixing bowl. Be careful not to discombobulate the potato skin.
3. Add butter, cheddar cheese, sour cream, parsley, all purpose seasoning and old bay to the potato insides and mix thoroughly. 
4. Stuff your potato insides back into your potato skins 
5. Add cheese, chopped bacon and cook in the oven for 10 minutes at 350 degrees
6. Garnish with fresh cut chives or green onions 

FOR GARLIC WHITE WINE GREEN BEANS
1. Heat nonstick pan and add olive oil, make sure your oil is HOT
2.Add green beans, garlic, white wine and move pan around making sure the green beans cook evenly and absorb all the flavors
3. After 3 minutes, remove from heat
